- Joseba Jimenez, a Basque from Donostia, opened his Seattle restaurant on September 17, 1998. Among the decorations one can find pictures of Basque cuisine, gastronomical critiques, Jai-alai baskets etc. Every so often wine tastings are organized along with dinners called 'Vertical Dinners' which are all inclusive. Besides the Basque Country (Donostia and Biarritz) Joseba Jimenez has also worked in restaurants in Madrid, Galicia, Paris, Bolonia, Germany and since 1982 in the U.S. in Washington D.C., New York and Seattle.
